You have just received a JAC machine and we would like to thank your very much for your
confidence.
In order for you to be com letely satisfied over the next few years, lease note the following
advices :
- Obtain assistance from your authorised agent for installation, start-u and follow-u ;
- In order to be able to benefit from the 3 year warranty (see conditions for returning be-
low), you should have the service book filled out by your distributor when the machine is
installed. The service book is located at the back of this manual.
JAC offers a 3 year warranty on all its roducts.
This warranty includes re lacement of original arts found to be defective and installation
free of charge by the JAC agent.
The warranty becomes effective from the installation date of the equi ment
Under the following restrictive conditions :
1. The equi ment is urchased under “normal“ conditions ;
2. Installation is made by an authorised agent ;
3. Utilisation of equi ment conforming to the indications of the instructions for use and for
the ur ose for which it is made ;
4. The equi ment is maintained daily as a good father should and with all due care ;
5. Maintenance followed-u by the authorised agent conforming to the maintenance s eci-
fications with at least one maintenance a year (maintenance at the user’s cost).
The manual has a age for this where the agent can detail the different maintenance.
If there is no maintenance follow-up by an authorised agent and/or if the service
book is not completed correctly, the warranty is limited to one year.
6. Exclusive use of JAC original arts.
This warranty doesn’t cover
1. Re lacement of normally wearing arts ;
2. Parts found not to be defective by our dealers ;
3. Problems resulting from abnormal use of the equi ment ;
4. Problems resulting from an installation not installed by an authorised agent ;
5. Parts where roblems result from trans ort damage or incorrect handling.
Re air and/or re lacement of defective arts during the warranty eriod does not extend the
initial warranty.
BEFORE START-UP
WARRANTY

- Before connecting your machine to the electricity network, check that the machine o -
eration voltage (see rating late on the machine) and voltage of the electricity network
are a ro riate ;
- Connection of the machine has to be made using an earthed lug ;
- Your electrical installation su lying the machine has to be rotected as below :
- North America : Main rotection 15A ;
- Rest of the world : Main rotection 16 A.
Note : All other roblems resulting from another ty e of connection will not be taken into
account.

- If necessary fix the feet or casters delivered with the machine ;
- Verify the direction of rotation of delivery belt on the machine ;
- Please refer to the “Instructions” section for using the machine;
- The blades tension must be checked and, if necessary, adjusted during installation and
after having cut 50 loaves.
- Remove the electric lug before every maintenance and service o eration ;
- Don’t touch the blades even when sto ed ;
- If you need to change the blades, have this done by your authorised distributor ;
- Make sure that you wear anti-cut rotective gloves when re lacing the blades or
carrying out o erations in the vicinity of the blades ;
- All maintenance or art changing o erations are to be carried out by a qualified erson.

DANGER
- This machine is intended for rofessional bakers ;
- This machine is solely intended for cutting tem erate baked bread ;
- It may only be used by one erson at a time. (unless otherwise stated) ;
- Don’t allow children or unauthorised ersons to use or mani ulate the machine ;
- It has to be ke t and used inside in a location, away from humidity and heat ;
- The machine has to be adequately lit for carrying out the work satisfactorily ;
- Don’t clean the equi ment with water ;
- This machine has a noise level below 75 dB(A) as er standard EN ISO 3744.

Use the diagrams on age 60 for using the machine.
At the start of the day ower u the machine with the red STOP button .
Procedure to use the machine :
1. Put your loaf on the rear tray, between the blades and the moving art ;
2. Push the green button.
For continuous slicing mode, ush the white AUTO button.
At the end of the day, ress the red STOP button to switch the machine off.
Tip : After a few days of work have the blade tension checked by a qualified erson.
Capacity: Number of breads cut er day : 0 to 2.000 (de ending on the ty e of bread).
Loaf dimensions (L x w x h) (cm): min. 12 x 6 x 6 - max. 44 x 31 x 16
Safety :
- The o ening of the crumb tray will revent the machine from working ;
- The machine sto s working when utting something in the way of the electric eye ;
- The green button flashes when a safety is engaged.

INSTRUCTIONS FOR USE

Daily, by a trained user :
1. Em ty the crumb collector ;
2. Use a slightly dam cloth for external maintenance ;
3. O en the table in front to clean on the inside.
Every 25.000 cuts and/or at least 1 time a year, by an authorised agent :
1. Remove the lug ;
2. Re lace the blades (see blade changing rocedure) ;
NB : Don’t over tighten the blades because there is a risk of deforming the frame ;
3. Clean with a brush and vacuum the inside of the machine ;
4. Check the state of the bearings ;
5. Lubricate the guides.
Check that your authorised agent records the intervention in your service book in
order to keep your 3 year warranty
Additional maintenance for models with oiling system
The oil to use is : 7940019 (as mentioned in the JAC “spare parts“ catalogue
Or food liquid vegetable oil with natural antioxidant
Daily, by a trained user :
1. Check that you don’t have to add oil into the lubrication + tank
(not in the trolley with the felt).
Every 1000 cuts or every 15 days, by a trained user :
1. Add the necessary dose of edible oil (100 to 150 ml) necessary to imbibe trolley felt ;
2. Check the tank (o tional) oil level.
Every 25.000 cuts and/or at least 1 time a year, by an authorised agent :
1. Remove the lug ;
2. Re lace the felts of the usher ;
3. Re lace the bread ressing felt (machine equi ed with the LUBRICATION +o tion).

MAINTENANCE

When ordering s are arts, check with your authorised agent the arts concerned using
the s are arts catalogue ublished by the manufacturer.
Always rovide the machine number as indicated on the rating late.
Your agent will order the arts from JAC.
The machine is completely stopped.
Did you lug it in?
Is the ower su ly coming to the socket?
The slice thickness is irregular.
Is the s ace between the blades irregular ?
Are the blades well tensioned ?
the bread vibrates in the cutters.
Are the frames well aligned ?
Do(es) the s ring(s) of the bread ressing behave correctly?
The bread cuts very slowly.

Always get an authorised dealer to carry out maintenance work on your machine!

SPARE PARTS
TROUBLESHOOTING

Use the schematics on age 62.
Make sure that you wear anti-cut rotective gloves when re lacing the blades or carrying
out o erations in the vicinity of the blades.
Once you have ensured that your machine is actually disconnected from the electricity
network :
1. Remove the bagging s ade, o en the shroud that rotects the frames su orting the
blades ;
2. Remove the stainless steel table (or belt) at the front of the machine and disconnect
the bread ress (machine equi ed with JAC Sto ) ;
3. At the to of the front frame, loosen the screws fastening the frame to the oly ro yl-
ene lamellas (never unfasten the lamellas from the framework, as you might alter the
default settings) ;
4. Tilt the frame forwards ;
5. Re lace the blades of the front frame :
- Loosen the hexagonal socket head screws which tighten the blades ;
- Re lace the blades and check that they are well ositioned in the rocker arm in ;
- Re-tension the blades by tightening screw, so that the blades remain in the frame as
a mark of tension ;
- Then tighten the nuts (machine fitted with the lubrication o tion).
In order not to warp the frame and avoid dangerous breaks, only replace 4 or 5
blades at a time.
6. Resume the sequence from oint 3 to 6 for the rear frame ( lace some kind of rotec-
tion on the front frame blades) ;
7. Re-assemble the frames while ensuring that you do not overtighten the frame lamellas.
Connect your machine to the electricity network, it is now ready.
